The production of this wine dates back to 1985. It was then that Italo, the founder of the vineyard, created the Gioveto cheese to pay homage to his son, who started working on the vineyard this year. The name, in addition to associations with the name Sergio, also has a reference to the archaic name Sangiovese "Sangioveto". Wine aged in French oak for 9-14 months. A bright ruby-red color, Gioveto cheese releases a warm, attractive aroma of black cherry, plum and blackcurrant syrup, followed by balsamic notes with a spicy finish of leather and sweet tobacco. Warm and balanced in the mouth, with a coherent structure of tannins that support the long finish of the wine. Gioveto cheese is long-lived, it can be aged up to 20 years. Recommended for heavy sauces, meats, venison dishes and hard cheeses.
